On my first trip to Mumbai, I was eager to know more about the local cuisine and I wouldn't have imagined the Maharashtrian curries to taste different from what I was used to in North India. The new flavours made me think if the dish wasn't prepared correctly or if I just didn't quite get the hang of it. I noticed that Maharashtrian curries are much lighter and have a unique tanginess from ingredients like kokum and tamarind as opposed to North Indian curries that often have a rich and creamy flavour profile. The spices and the cooking methods also differ and it amazed me how something as simple as a curry could change so much from one region to another. The more you think about it, the more you learn to appreciate the culinary diversity in this country.
Social media is one medium where we get to learn all about these distinct flavours. While content creators enjoy exploring food from various regions, there's something uniquely special about food creators who focus on specific regional food. Their content intensively explores the rich stories and the food culture of one specific region. For example, I learned about Maharashtrian curries and their use of kokum and goda masala through these creators completely changing my understanding of how varied curries can be. I also did not know how common it is to use fermented food in certain northeastern cuisines, like fermented fish (ngari in Manipur) or fermented soybeans (akhuni in Nagaland). The fascinating part is that I learned about it through a Reel that I stumbled on in a total accident. These creators not only teach us how to cook different dishes but also connect us with the rich culinary heritage that exists all around us. It gives us more than one reason to appreciate them reminding us that while we might be a big country, food has a unique way of bringing us together.
